Olvie oil is mainly used for flavoring. Use vegetable oil for deep fry and marinating. olive oil is more expensive and usually aren't used in large quantity. They also have a lower smoking point and burn faster so cooking can be tricky with olive oil. It is better for the heart and used for dipping sauce for bread etc. I use olive oil a lot when I cook and as long as it doens't get too hot you can use as much as you want. A nonstick pan is a good way to use less oil as well.Olive oil is healthier and adds flavor but has a lower smoke point, whereas vegetable oils tend to add less flavor but don't burn as easily. For salads, sauteeing fish or browning meat, or other applications where the flavor is desirable but long cooking at high heat is not an issue, use olive oil. For deep frying, pan frying, or recipes in which the flavor of olive oil is undesirable, use vegetable oil. Corn oil, canola oil and soybean oil are all readily available in grocery stores, as is vegetable shortening. Cottonseed oil, which is harder to find, actually has a higher smoke point and adds almost no flavor.
